Owl to Helga Hufflepuff

Ms., Madam, Helga, Ummm I'm not quite sure how to address you, being the founder of Hufflepuff and all. help? I really don't want to offend you.

Here is the recipe I promised you:

Piratical Truffles

Ganache:

1 lb. chocolate in small pieces (try to use the best you can get. I mostly use Ghiridelli as it's the most readily available to me. I use a mix of double chocolate, semi sweet and milk.)

1 C. whipping cream*

1 TBSP of Cap't Morgan's Spiced Rum (or to taste)**

Heat whipping cream, until it just begins to steam. Put chopped chocolate in a heat proof bowl and pour cream over chocolate. Let sit for a minute and then stir until the chocolate is melted. If you need to put it back on the heat for a minute or two, that's okay. Add rum, mix well and let cool.

Make 1 inch balls. I use a scoop and then refrigerate for a few minutes to chill them, before I make the balls. I've had to freeze them too. Depends on the weather.

outer coating

**For some reason my ganache never solidifies and stays that way at room temp so I always have to put an outer coating on mine. It's more of a hassle, but it also means more chocolate too. I found that if you get the molds for filled chocolates it makes it much easier and quicker then to try to dip them by hand.

1 1/2 lbs. tempered chocolate. I use straight dark chocolate or a dark chocolate/double chocolate mix (I have used those candy melt things in a serious pinch, but the final product was not what I wanted. Of course if you like the candy melt stuff then by all means use it.)

Dip in the chocolate and let set to harden. Store in an airtight container in a cool place.

*You can also steep spices or herbs in the cream while it is heating up. Strain cream before pouring it over the chocolate. A cinnamon stick or two with a small slice of ginger and one clove is a nice mix. A handful of freash spearmint is wonderful too (I wouldn't add the rum in this case.)

** You can use rum flavoring, but I find it's too chemical for my taste. If you are going to go through the trouble of making your own truffles why would you add a fake flavoring. If you disapprove of the small amount of rum then feel free to omit it and add another flavoring like coffee.

((OOC: I've actually had friends of mine follow me around for these truffles, like in a line follow me. A couple actually got on their knees for some! Yes, my friends are weird but they do know I use really good chocolate and they are all suckers for good chocolate.)

Oh, dear, Helga is just fine. You will not offend, not in the least.

Thank-you very much for the recipe, and I hope I will have great fun making them. Sometimes baking is very soothing and comforting, after all.

I will let you know if I run into any trouble spots, and perhaps we could get together and bake or cook together sometime.

It is perfectly understandable to taste test. I will probably do the same.
